I have an ulterior motive for starting this thread, but the subject would have been long and weird sounding...
Has anyone ever successfully prepped RUNNY eggs?
I'm growing tired of my current work-week prepped breakfast of scrambled eggs, bacon, and yogurt. Last weekend I tried the Efferding special of eggs and white rice and I found I actually really dug it, but the eggs have to have a runny yolk to mesh with the rice. Normally I accomplish egg-prep by intentionally undercooking the egg... so when I microwave it in the morning they aren't overdone...
Anyone ever done this with a over-easy/over-medium egg? Will it get all gnarly ya think?

Can you just fry them up in the morning? I think it'll be really hard (impossible?) to prep that and get everything else back to temp w/o cooking the yolk.

I think the best way to do it is to cook them in the morning like @cgeorg mentioned. The only other thing I could think of would be to add cheese to them if you're just heating them up.

My favorite technique for cooking runny-yolk eggs is poaching. Fast, reliably doesn't break the yolks, and doesn't require any oil.
Put 1" water in a pan, add salt, garlic powder and some vinegar, bring to a boil. Crack the eggs into the water gently. Put a lid on and turn heat to low. Remove in a couple minutes with a slotted spoon.
The vinegar isn't just for flavor, it keeps the egg from dispersing into the water and turning into soup.

How does Stan, or you, feel about pasteurized egg yolks? Can't you just cook the parts that need cooking and then pour the requisite amount of pasteurized egg yolk on top in the morning?

You can sous vide eggs to any degree of done-ness and refrigerate afterwards. Even as far as leaving the whites totally runny but the egg pasteurized.

Not sure how all this would work upon re-warming in the microwave. You could put the cooked but cold eggs in warm water to take the chill out of them while you heat the rice in the microwave.

My lazy ass already has to drag myself out of bed at 3:30am to be out the door by 4:00 and work for 5:00... my minutes in the morning are precious and few lol...

Had some leftover rice so I just tried throwing it into the regular scramble I make for the weekdays (3 whole, 4 whites) and it isn't too bad. Might just stick with that if I wanna keep doing the rice in the morning thing (much vertical, very Stan).
Now with that out of the way... the best way to fry an egg is in bacon grease.

The idea of “prepping” a runny yolk egg fills me with anger. Just cook it, it takes no time and leaves no mess.
I do the :30 min morning routine too, but I still cook eggs and manually brew coffee. You have to prioritize. Brushing teeth has to go.

Huevos Gringeros - 2 tortillas smeared with refried beans and microwaved about 45 seconds. 4 eggs poached in salsa verde with some chorizo-style seitan mixed in.
