PSA: Healthy Pizza

What's a carb? A car part? What's a macro? A type of camera lens?

Yeah, cauliflower pizza crusts actually taste awesome when ya make 'em right. I'm from N.J./N.Y. originally where awesome pizza comes from and I was amazed how "close" the cauliflower crust tasted. Low carb heaven.

Our store carries the pesto and the mushroom varieties of these -

Don't have a box on hand just now, but it's relatively low carb.
iirc, any oils used are high quality as well.
We get them for my wife.

I've nibbled, and they are quite flavoful.

Do you make your own crust or buy it? And any tips for getting it crispy? The sogginess of it always lets me down.

I cheat. I have a food prep place I get most of my food from. They have the pizzas ready to go. Apparently you can buy cauliflower crusts at Costco and some grocery stores? Have not confirmed.

I cook it on cast iron pizza pan. Cook it longer. Directions say 12 minutes at 400. I go closer to 16 minutes at 450. I'm also at 5,300 feet of elevation in Denver which alters cooking. But in general up the cooking time and temperature to get the crust more crisp.

The cheese pizza from the Costco food court actually hits my target macros pretty much exactly. I like to pile spinach on top of one slice and make a sandwich with another slice.

Can't wait to get back to maintenance so I can fit pizza into my macros. Zero percent chance right now, but I've only got one week to go!

Carbon has me at 202/352/128 P/C/F, which works pretty well for cheese pizza.

Woooooow. I'm at 191/191/43. No way I get cheese pizza in there. Cheese alone screws me over.
