Where do you buy your prime steak? How much do you pay?

I didn't eat steak often until I got a sous vide. Now I eat steak most days. And even more recently I noticed that prime is so, so, so much better than choice.

How much do you pay for prime steak? Any buying tips?

I found some prime $10.00/lb strip at BJ's wholesale and it has been fantastic. But it's normally more.

I just got some prime NY Strips at Costco for 9.99/lb. But I prefer choice ribeyes to prime strips.

I'm confused as to what they actually are. Ribeye caps aren't shaped like that, so I assume that they're rolled up or something?

Seems like it would be better to cook it flat. Super hot and super fast. More surface area for tasty crust.

Plus, isn't it a food safety issue to fold it up and cook it medium rare?

I think the proper punishment for people who incessantly talk about sous vide on the internet is to strap them to a chair and make them watch people cook steaks with fat and butter ADDED to the bag.

But on topic, the answer is always Costco/

I saw those tri tips. Also saw that they had prime sirloin steaks. I always love a good sirloin at the steak house. Kind of want to try those too. Sous Vide of course just so I can talk about it on the internet and piss off Root.

Oh man. The prime tri tips are so good. Ridiculously juicy.

I just "dry brined" for 24 hours in the fridge, seared, then moved to the indirect side until ~130.

I'll try sous vide + violent sear next.
