Cooking with Cast Iron

It's turning cold. I like simple meals cooked in cast iron pans when it's cold.

I made a chicken pot pie.

Oh, yeah. Shakshuka is the best. Because of this reminder, I'm going to make it tomorrow with some tomato puree I rendered down today from tomatoes from my garden.

I use a stainless pan for it, though.

Since Hanley is using cast iron to measure phallus* length now...

How long have you personally curated an iron skillet? I started curating one (12") almost 25 years ago now. It's a fantastic implement. Makes luxurious corn bread.

I was also lucky to find smaller cast iron pieces (6" and 8") that had been well-curated at a garage sale about a decade or more ago. The 6" is fantastic for grilled cheese.

I have no clue what Hanley is doing with his food.

*Allentown's work blocks the word pen!s, so I don't want him to miss out on the opportunity to learn.

Also, I have a cheapish cast-iron griddle I like to make burgers on. How to clean?! I wipe as much grease off with paper towels as I can, but you can't get much off. I can't rinse it in the sink, because I don't want to pour that much grease down my drain. I most recently tried to wipe the ease stuff off with paper towel, sprinkle salt on it, then scrub it with this chain-mail looking thing I got from Amazon to clean cast iron, but that didn't work that well either.

What is it you’re trying to scrub off?

My cast iron skillets do not see detergents. They see hot water and that’s about it.

I was under the impression that soap was never to touch cast iron. I could certainly do this though.
