A few of the things I've done to make low-carb dieting more tolerable:
1) Mix chocolate protein powder with peanut butter.
Real peanut butter, like Smuckers or Adams. Instead of following an exact ratio, I just fill a bowl with however much peanut butter I feel like eating, then mix in as much protein powder as it can hold. I find more than half a jar makes me sick.
2) Heating up a Quest bar.
At room temperature, quest bars are disgusting. But 10-15 seconds in the microwave really improves them; it's almost like a fresh cookie.
3) Homemade ice cream
Put one cup of cream, 1-2 tbsp of Swerve, and a drop of vanilla extract into a mason jar. Then shake it violently for 10 minutes and then put it in the freezer for 4-5 hours. It has a distinctly creamy taste unlike store-bought ice cream, but it is still good. Don't leave it in the freezer too long or it'll harden.
